Quick Pickled Jalapeños Recipe

Not sure how to use up jalapeños? Try this quick pickled jalapeño recipe that’s really easy and can help reduce food waste! It’s delicious and perfect for nachos and so many other snacks. You can also use it to make just about any type of spicy pickled pepper, so don’t be shy to try this with other types of spicy peppers too!

A few weeks ago, we started receiving a weekly produce box from Misfits Market. It’s been really fun to open the box and be surprised by the variety of fruits and veggies that will fill our plate in the coming week. 

Generally, the box includes a really good variety of produce. In the first two weeks, we received eight jalapeños. We enjoy spicy foods, but that’s a lot of jalapeños for us to eat in everyday meals.

However, my husband loves pickled jalapeños pr pickled spicy peppers on nachos. Working from home these last few months, he’s made himself an afternoon snack of nachos almost every day. So… instead of buying more jalapeños for him, I pickled them myself!

It’s was super quick, and I already had everything I needed (which I suppose was good as we committed to not buying groceries for the week). 

I’ve included the recipe below. While we have been using up almost everything in our Misfits Market box pretty easily, I’m sure we will be working more pickling and similar jarring recipes into our routine.

FYI: I use the word “jarring” loosely. These are not canned for preservation so they need to be stored in the fridge. They’ll last a couple of months though, so you’ve got plenty of time to enjoy them!

Pickled Jalapeños

Ingredients

  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp sugar
  • 1 tbsp salt
  • 2-3 cloves garlic, crushed
  • 5-7 small jalapenos, sliced into rings

Instructions

  1. Add vinegar through garlic to a small pot and bring to a boil.
  2. Add jalapenos to the pot and remove from heat. 
  3. Allow to rest for at least 8 minutes. 
  4. Store in the refrigerator for up to two months.
