A Simple Seasonal Vegetarian Meal
Hot summer nights call for cool, easy dinners. Fresh from the farmers’ market, I threw together a somewhat non-traditional dinner. You might remember seeing this on Instagram just before we inhaled it.
I whipped up a little traditional tomato, mozzarella and basil caprese, all of which I had purchased at the farmers’ market the day prior. We also had some lemon, garlic and eggplant bruschetta. I shared the recipe for the eggplant bruschetta a while back.
This dinner is pretty light. We don’t do meatless dinners that often, but it’s nice occasionally to keep our meal fresh and test out the vegetarian waters. I think the boys asked for some chicken with this meal, so I cut up some leftover chicken from the fridge too. But I’m not complaining about an easy, healthy meal.
And that didn’t last long…
