Orange Donuts with Orange Glazed Icing

Ingredients

  • 2 cups flour
  • 2/3 cups brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp unsalted butter melted
  • 2 tsp orange zest separated in half
  • 1/2 cup fresh squeezed orange juice
  • 2 eggs
  • 2 cups powdered sugar
  • 4 tbsp fresh squeezed orange juice

Instructions

  1. Donuts:
  2. Preheat oven to 350 degrees.
  3. Mix flour through salt in large bowl.
  4. Mix butter through eggs in medium bowl, using only 1 tsp of the orange zest.
  5. Pour wet ingredients into dry ingredients and stir just until combined.
  6. Grease mini donut pan (I used butter but cooking spray works as well) and lightly coat each cavity with flour to prevent donuts from sticking.
  7. Fill donut cavities 1/2 to 2/3 full.
  8. Bake for 5 - 6 minutes or until cooked through.
  9. Allow to cool before icing.
  10. Glaze:
  11. While donuts are baking / cooling, combine powdered sugar with remaining 1 tsp of orange zest and 4 tbsp of fresh squeezed orange juice.
  12. Whisk together.
  13. Dip donuts in the icing and allow to set (or just eat one right away like I did because they're so darn good).
