Fresh Edamame (and Roasted Red Pepper) Spread

  • 2 cups edamame thawed, shelled
  • 1 red pepper roasted (optional)
  • 3 tbsp lemon juice of 1-2 lemons
  • 4 cloves garlic peeled
  • 1 tsp lime juice of 1/2 lime
  • 1/3 cup olive oil extra virgin
  • 3/4 tsp cumin ground


  1. Combine all ingredients edamame through lime juice in a food processor. Mix on high until all  ingredients are smooth and combined

  2. Add olive oil slowly while mixing until you reach your desired consistency. 

  3. Add cumin in food processor. Mix and serve with vegetables or toasted crostini. 

Recipe Notes

The roasted red pepper is optional. To roast the red pepper yourself, place on a pan in the oven. Bake at 500 degrees for 35 -40 minutes, rotating every 10 minutes or so. Outside should blacken. 

Remove the blackened pepper from the oven, wrap in foil for 20-30 minutes to allow it to steam and soften. 

Peel skin off of pepper, remove stem and seeds, and include the pepper in the initial set of ingredients added to the food processor.
