Whole Wheat Banana Spice Pancakes

Ingredients

  • 2 tbsp butter melted
  • 1 tbsp honey
  • 4 bananas mashed + 1 banana, cubed
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg

Instructions

  1. In a medium bowl, mix flour through nutmeg. Set aside.
  2. In larger bowl, mix melted butter, honey and mashed bananas.
  3. Add eggs to the wet ingredients and mix.
  4. Add dry ingredients to wet ingredients, mixing just enough to combine.
  5. Add sliced banana and gently mix in to the batter.
  6. Lightly butter a skillet and pour about 1/8 cup of batter onto the skillet for each pancake.

  7. Cook until batter is cooked throughout. Top with bananas (optional) and enjoy!

Recipe Notes

Zero Waste Recipe Notes: 

Based on what I have in my fridge, I have swapped 2 tbsp of buttermilk for one of the mashed bananas in the past (if I'm trying to use up buttermilk or don't have enough bananas). 

You could also add other fruit instead of or in addition to the banana chunks. Blueberries, for example, are a great option.
