  • 1/2 cup cold water divided
  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 oz pack of gelatin
  • 1 tbsp pure vanilla extract

  1. Place 1/4 cup of cold water in a stand mixer. Add gelatin and let sit for about 5 minutes (a little more is ok).
  2. Line 9" square baking dish with cooking spray or butter and coat lightly with powdered sugar.
  3. Mix 1/4 cup cold water, sugar and light corn syrup in a microwave safe bowl
  4. Microwave on high for 2 minutes, remove and stir**
  5. Microwave for another 30 seconds on high**
  6. ** be sure to watch this heat up. Every microwave is different and I originally let this heat up far too long. It bubbled all over the inside of my microwave and was a bummer. It just needs to be hot enough for the sugar to dissolve in the water.
  7. Add water, sugar and light corn syrup mixture to stand mixer. Mix on medium-low for 10 minutes. Wipe sides clean, mixing in any ingredients. Mix on medium-high for 10-12 minutes. Mixture should become white and fluffy, increasing at least three times in size.
  8. Mix in vanilla.
  9. Place marshmallow cream mixture into the baking dish and allow to sit at room-temperature overnight or in the refrigerator for at least three hours.
  10. Cut into squares and enjoy!
