St. Peppermint Patty Brownies

I have a pretty serious sweet tooth, and most of the time it’s requesting chocolate. Add peppermint to that chocolate, especially dark chocolate, and my sweet tooth is in heaven. I really enjoy baking and T loves getting his hands dirty as my little sous chef. We don’t make too many fancy things, but once in a while we amp up our festive spirit and go all out. (I started this recipe from a box of brownie mix, so you can tell “all out” still isn’t all that crazy.)

Note: While cooking, the peppermint patties will rise so be sure to leave plenty of room atop the brownies so they don’t rise up over and out of the pan (lesson learned from personal experience…)

Step 1: Mix brownie batter according to instructions

Step 2: Spread half of brownie batter in pan.

Step 3: Add a layer of the peppermint patties. Don’t be shy. Not enough and the brownies won’t explode with the tasty mint flavor intended.

Step 4: Layer the remaining batter on top of the peppermint patties.

Step 5: Bake following instructions on box. With the peppermint patties inside, you may have to bake it a bit longer than the box instructions so check the progress along the way.

Step 6: While the brownies are baking, make the frosting. Mix the Neufchâtel and butter, then add the powdered sugar and finally add the milk, extract and coloring (if desired).

Step 7: After the brownies have cooled, frost them, add a mini peppermint patty and sprinkles if desired. Then enjoy!!

Be sure to get your little ones involved in the process. They can pour, mix, stir, sprinkle and do pretty much anything away from the oven with this recipe.

Box Brownies 6 full-size peppermint patties or 1 bag smaller size peppermint patties 1 bag mini peppermint patties Green sprinkles

Ingredients

  • {Brownies}
  • Box Brownies
  • 6 full-size peppermint patties or 1 bag smaller size peppermint patties
  • 1 bag mini peppermint patties
  • Green sprinkles
  • {Frosting}
  • 4 oz Neufchâtel, cream cheese, softened
  • 4 tbsp 1/2 stick butter, softened
  • 1 tsp peppermint extract
  • 3 1/2 cups powdered sugar
  • 1/4 cup milk
  • 15 drops green food coloring, if desired
